Understanding Restaurant Health Scores

The restaurant evaluation form utilized by District 10 Environmental Health Specialists should be posted in all restaurants in a location readily visible to restaurant patrons. This form includes three categories, each with a score out of a possible 100 points.

IMMEDIATE HAZARD TO YOUR HEALTH

This score should be 100. Items in this category, often referred to as “category I”, include safe and approved food source, employee hygiene, proper food temperatures, proper food handling techniques, properly functioning water, sewage and plumbing, and storage of pesticides. A violation in this category must be immediately corrected by restaurant staff.

EMERGING HAZARD TO YOUR HEALTH

This score should be 90 or above. Items in this category, also known as “category II”, include properly stored and labeled food containers, properly cleaned and stored food utensils, and cleanliness of restroom facilities.

GENERAL MAINTENANCE

Items in this category, also known as “category III”, include general upkeep of such facilities as floors and walls, garbage storage areas, and posting of prior inspection report and choking poster.
